Scanned PDFs are image-based: each page is a photograph of a document with no text layer. Edit mode cannot modify image pixels, so you cannot directly change the scanned text. What you can do is use Annotate mode to place a white rectangle over the area you want to cover, then add a new text box on top with the corrected content. For full text recognition in scanned documents, use the OCR tool first to generate a searchable PDF, then open it in the editor.
Yes, annotations increase file size slightly because each element is stored as an object in the PDF structure. Signature drawings are saved as vector paths, which are small. Image annotations are larger. If file size matters, use the compress tool after editing. Edit mode changes are written directly into the existing content stream so the size impact is minimal for text-only edits.
